Pancake mix (I prefer to use Maya Pancake mix, not the instant one step mix)
Oreos (Double stuffed Oreos to double the fun!)
Ice cream (Vanilla makes a good combination)
Any condiments of your choice (sprinkles, mini mallows, choco chips, etc.)
Procedure:
- Boil cooking oil in a pan deep enough for deep frying the cookies.
- Prepare the pancake mix.
- Test if the oil is hot enough by dropping a few drops of batter into the oil. it must not be too hot for the cookies may get burnt. If the mixture floats then the oil is hot enough.
- Dip the cookies one at a time on both sides, do not leave them in the batter for this may cause the cookies to be too heavy for frying.
- Carefully put the dipped cookies into the pan, wait for it to float then turn using cooking tongs. Repeat this until both sides are golden brown.
- Place freshly cooked wicked oreos in a strainer to remove excess oil.
- Serve in a platter with a scoop of ice cream on top, decorate with condiments and enjoy!
